Roasted Red Pepper Hummus from Inspired Taste

 
 
Ingredients
 
 
  • ¼ Cup Tahini
  • ¼ Cup Fresh Lemon Juice
  • 2 Tablespoons Olive Oil
  • 1 Garlic Clove, minced
  • ¼ teaspoon Ground Cumin
  • Pinch Cayenne Pepper
  • ½ teaspoon Kosher Salt
  • 1 Pint Jar Garbanzo Beans/Chickpeas or a 15 oz Can, drained, rinsed, and skins removed
  • 3/4 Cup Chopped Roasted Red Peppers
  • Water, as needed
 
 
Instructions
 
 
In the bowl of a food processor or a blender, combine tahini and lemon juice. Process or blend for 1 minute. Scrape sides and bottom of bowl then turn on and process or blend for 30 seconds.

Add the olive oil, minced garlic, cumin, cayenne pepper, and the salt to whipped tahini and lemon juice. Process or blend for 30 seconds, scrape sides and bottom of bowl then process another 30 seconds.

Add half of the chickpeas to the food processor or blender then process or blend for 1 minute. Scrape sides and bottom of bowl, add remaining chickpeas and process or blend for 1 to 2 minutes or until thick and smooth.

Add the roasted red peppers to hummus and continue to process or blend for 1 to 2 minutes or until smooth.

If the hummus is too thick or still has tiny bits of chickpea, with the food processor or blender turned on, slowly add 1 to 3 tablespoons of water until the consistency is perfect.



I divided my hummus into individual containers for Jaymz to take to school in his lunch and the rest I put in a large container for us to take what we would like as needed. I hope you all enjoy this yummy, healthy, and tasty snack/lunch.
